You can't form your conclusions and base your theory off a very very small sample size of 2.

If you have the time, you should train more pure str and pure dex islanders and then see how the average mp and hp differ for both.

But it would be great to also see how it affects other classes. Like dexless vs. non-dexless thieves, or even better strless bowmen vs. non-strless bowmen.

Just looking at it, it doesn't seem that either one has an advantage, since 10 hp is not much difference. But you would have to run a test on it to see if the difference was statistically significant. And yes, a bigger sample size also.

Level 20:
50 + (19 * 12) to 50 + (19 * 16) HP
5 + (19 * 10) to 5 + (19 * 12) MP
278-354 HP
192-233 MP
Those are the normal ranges for global for a level 20 Beginner. If STR or DEX had any bearing on HP or MP, we would've known about it by 3+ years into the game.

Im pretty sure tests have been done and its been proven that str doesnt result in more hp gain. However, INT does result in more mp gain...
As Alysha said, you'd need a bigger sample size than 2. When you level, you have a randomly generated amount of hp/mp you gain and it usually ranges from 4-5 above and below a standard number. If the HP you had on the str one was 100 more than the dex one, then I'd think it had an effect. However, a mere 10 could just be the luck of hp gain/the lack thereof when you level.

There's a range of 5 different HP gains per level, (12 13 14 15 16 for beginners), 10 difference is definitely not enough to say a stat matters.
& as mentioned, private server characters do not generally have the same HP/MP as global characters, since level-up stat gains are server side. The common source (odin) gives an average of 0.5 more MP per level, as well as starting a character with 45 extra MP.
I've never seen anything that indicated HP gain changing depending on base stats, every level up I've ever done (over 300 as a warrior, about 70-100 of the other classes, and 25 levels as a "beginner" over level 10) was within the range of 5 specific to the class.
