Are the items earned during the quest of any use after the quest ends? They simply don't take them from you for no apparent reason.

You can safely throw them away after you complete the entire quest line.

The um, etc that your Job Instructor gives you allows you to enter the Demon Portal of your Class (I think). You can refight the bosses if you want.

There's no point after that because you can fight all 5 bosses in Astaroth's Strolling Path.
