I've dealt with unfreez a bit. It comes out a tad...grainy? But it looks good.
To make an old one for my islander, I ended up taking a screenie from the game for the background. Then I imported it into BannedStory and made the characters in there. Then I just print screened into paint and cropped it to the right size. Simplistic, but it worked. Heh, actually found it:

And in general, making a signature is pretty easy - even if it isn't animated. Still shots are nice too.

An animated sig is like a cartoon, just images in sequence.
I make mine with (lots) layers in photoshop. Duplicate one layer, adjust it for a bit, the duplicate again and repeat it till you get back to your original frame without anyone noticing it. When you have all layers finished, make a .gif sequence with all of them in Image Ready (also from adobe, like photoshop). It takes a lot of time to make (a good) one. But you can start simple with just 2-3 images sequenced in a row. Just don't give up half way in the proces!

But it looks good.That's cause GIFs are 8 bit color (256 colors), so if you take a MS screenshot and convert it to GIF, whatever program you're using will dither it in order to fit it into 256 colors. One reason why I personally prefer APNG.

I use bannedstory with sony vegas and photoshop. Sony Vegas is pretty simple if you can get your hands on it. Photoshop is just a few guides away from mostly being understood. There are some youtube videos that explain how to use SV i think.
