Dex is more important due to the kinda huge amounts people can get now. Though skipping it is probably fine 95% of the time, comparing base str to base w.atk (without percents) works.
Generally, divide it by 4 and the difference between your str and dex % multipliers (eg. 1.6 with 160% str, 100% dex, = 160/100, ie no dex gear), and add that as str, it's a better approximation.
Like, my Paladin has 160 dex / 4 / 1.6 =~ +25 str.
