I don't understand why people say Old maple was so much better

Aside from the potential part, I think that spoonfeed levels are perfectly fine until fourth job, since that's where you get all the skillset to your disposal, and it's where you have more fun, technically. If the challenge starts there, there shouldn't be a problem with that.
