I don't really care that much what style it is.
The bigger points in choosing an anime for me are, in order of importance:
-It is good and original, overused themes and stories are not nice.
-It should not be far too long, at MOST 50 episodes unless it's pineappleing godly (FMA:B for example).
-Preferably it should have finished airing already.

Oh, and I just watched "Spice and Wolf" just now, since JoeTang mentioned it. I remember seeing the name a long while ago somewhere else, and never got to it, until Joe reminded me of it again in this thread. I have a ton of wallpapers from that anime, but I never knew it until today. It seems like a really interesting series, based upon my observation of the 1st episode only. I'm surprised that even with slight-nudity (no nipples exposed), with the way the story unravels, it doesn't have that "Oh, this anime is all nudity and just cleavage, lots and lots of it" feeling to it.
9/10, since this isn't normally my sort of gig, but I enjoy the story so far, and I like the characters.

If there's anything here that doesn't have an explanation after, it just means I was too lazy to retype one for the show, doesn't mean I don't have anything good to say about it.
Original series:

Very unique series with a very nice art style. It's actually a spinoff based on the last arc of Ayakashi, but it's good on its own. If you want, you can watch the last 4 episodes of Ayakashi as a start. Ayakashi isn't one connected story, so starting from the last 4 episodes will just give you the Mononoke part of the story.

Gunbuster is one of GAINAX's older works (older than Eva). It starts off pretty slow, but it's only 6 episodes. Because it's so old, some of the themes in it seem pretty overused by today's standards. Diebuster is a sequel to Gunbuster that was in 2004 (you can tell the huge difference in animation between the sequel and prequel). It's actually semi-tied to FLCL's universe. It's actually the complete opposite of Gunbuster's theme. While Gunbuster was all about staying realistic, Diebuster takes on the "kick logic to the curb" mentality that GAINAX used later for Gurren Lagann as well.
Both of them are 6 episodes, so basically the first 6 episodes may be slow for you but are worth it on the second half, when you see Diebuster. Even if they're not that closely connected, I advise against skipping Gunbuster and moving straight into Diebuster. I feel Gurren Lagann was kind of like a spiritual successor to Diebuster. There are also Diebuster references in Gurren Lagann.

Not full blown comedy. There's a really good story in this. It's not particularly based on your list, but felt like including it as a suggestion for you. It's another one of my personal favorites, but that may just be because of how much I relate to it.

Dokuro - There was a Dokuro 2 made. I think it was only 2 more episodes or something.
Higurashi no Naku koro ni - There were 5 episodes released after, Higurashi no Naku Koro ni Rei (http://www.animenewsnetwork.com/encyclopedia/anime.php?id=9199). It starts off with just a fanservice episode, but gets more into the story in the 2nd or 3rd episode.
Tengen Toppa Gurren Lagann - Movie was released for it. The second movie comes out soon on DVD in Japan. It's basically a recap, like what GAINAX did for the Eva movies, but with new parts added in and a completely different ending.

I second these as well. Ergo Proxy is kinda off. Story can get lost, but its visually good. (havnt 100% finished, as my current sat provider doesnt have IFC, which was airing it).
Paranoia Agent is awesome, mainly just for the story. Visually, its comparable to FLCL (from what i remember).
NHK is great for story as well, but its not quite like some of the others listed. Its more of a love story with a bit of insanity mixed in.
Witchblade was an OK series as well, mostly action.
Speed Grapher for story as well.
Movie; Steamboy was done well (same guy that did Akira).

Hm, not a single mention of Clannad or Clannad: AS in this thread! It doesn't really match with any of the red highlighted ones, but it's a seriously nice watch. Give it a shot.
If you're looking for good comedy: Detroit Metal City, Yakitate!! Japan, Hayate no Gotoku/Hayate the Combat Butler.
You seem like you're also trying to get into Hayao Miyazaki's stuff. My Neighbor Totoro is a very nice watch, although it's arguably less complex than other works like Princess Mononoke. Give a chance to Nausicaa of the Valley of the Wind. In addition, the somewhat more recent Ponyo was also supposed to be pretty nice.
I think Mushishi is also very good and I think it might be comparable to the works of Miyazaki. It's one of the finest fantasies I've seen, and arguably one of the best anime of the decade; and to add, the graphics are phenomenal for it being a 2005 series. Also, I'll have you note that it makes you have to almost sit and think about the episode for a long time to digest everything, process everything through my head, and think about the story of the episode despite it being an episodic series in nature.

I wanted to mention Kanon, Clannad, and AIR. However, people have seen me talking about it through-out the forums when I went all crazy during those times when I did watched Clannad. Clannad is a great anime, for sure. However, I admit I enjoyed Kanon a BIT more.
EDIT: Also, I finished Clannad and it's sequel, and even watched the Tomoyo x Tomoya episode, as well as Tomoya x Kyou.
2nd EDIT: Another anime, which is really old... that I'd like to suggest is "Yu Yu Hakusho". This will always be one of my favorite older animes, period. No substitution for it. When I watched Clannad, Nagisa's appearance completely reminded me of Keiko from YYH.

"Fullmetal Alchemist: Brotherhood" is a great anime too. I always enjoyed watching or reading FMA, story is extremely compelling. Makes me wonder what's next, always. For the typical person, they might find FMA a bit too extreme at times when it comes to theories, or how complex the storyline is, so people don't really try to dig deeper into the story. Those who tends to enjoy the story takes it in for what it is, but expand their own knowledge of it. I love FMA, own the first FMA anime on DVD, own the movie on DVD, and I'm now watching Brotherhood online. I'm at the latest episode, as well as keeping up with the manga.

2nd Season of Haruhi was a troll by KyoAni. Skip through endless 8, or if you're a loser like me actually watch all the episodes.
And yeah, Lain is confusing the first 5 episodes or so. Then the plot kicks in and you can piece together what's going on.

I keep a running list of shows that I add to when I totally finish that show. I can't believe I forgot to add Bakemonogatari to my list, let alone this thread. :< Lightly off topic but is there any word on when eps 14 and 15 are gonna show up? Or the sequel/prequel? I thought I read that those were greenlit, but I can't think of any dates attached to them.
I think OP would find Zero no Tsukaima to be a load of drivel if he didn't red-highlight Shakugan no Shana. I'll second Spice and Wolf, Kannagi, and add the first season of Miname-ke even though slice-of-life/drama seems like a hit-or-miss genre here.

I'm no expert like some here but I strongly Recommend "Eden of the East", it's really good.
I also think you should watch Umineko no naku koro ni, it's great.... until it gets weird...
I've also heard that one piece is really good, but not until past episode ... uhhmm don't remember but at least 20, I watched like 12 and got kinda bored.
Last but not least, watch Detective conan, it's not the best ever but it has good cases and it's worth watching a few episodes every once in a while.

I was thinking that too. Personally I found the first season okay, the 2nd season meh, and the 3rd season was basically nothing but fanservice each episode.

If he has enough time, I think he'd do better reading the VN. I'm not the type of person to usually complain about adaptations or anything, and I thought the anime adaptation wasn't as bad as everyone made it seem. I just think that if you have the time, you should read the VN instead.
Not that I'm against this recommendation, just giving some input there. Watching the anime and then picking up the VN after ruins it for you. The anime adaptation seemed more like candy for those who already read the original. It makes it really confusing for anyone who never read the original, which is why you commented that it gets weired.
As for Conan and One Piece, both are long series. I haven't really watched One Piece, but Conan is nice for watching every now and then.

Oh, here's an older anime I have on DVD that I personally enjoyed. It's so old, but you might like Escaflowne. I actually enjoyed it. Yes, it's so old, you can tell just by looking at the animation, but the story is magnificent. Lots of blood-shed as well.

Hmm, one thing I have to say, I'm 20 years old (soon to be 21) so sometimes animes have a younger audience in mind.
I like animes that treat with subjects that are closer to me.
For example, Eureka seveN which I have just finished watching, has a lot of the "understanding the adult world" and "learning about love" themes that are somewhat boring to me since they don't reflect my current state.
However, take 5cm per second, it's still about love and romance but it has a much deeper approach. Anyone who's watched it will agree.
It's not like I don't like those types.

-Black Cat (seen 4 episodes already, seems nice)
-Cromartie High School (which I had already downloaded once but deleted it without watching for unknown reasons)
-Ga Rei Zero (haven't watched a single episode of it yet)
So that will keep me busy for a bit

I second Sailor Moon (R/S/SuperS/Stars). Also, Love Hina, Rozen Maiden (Traumend), and anything by Clamp (Mahou Kishi Rayearth, Card Captor Sakura, Angelic Layer, Chobits, and Tsubasa: Reservoir Chronicle are the ones I watched).

Princess Tutu is up there with my favorite magical girl anime, along with Nanoha and Sailor Moon. Nanoha starts off really generic, picks up at episode 6, and then starts off season 2 from the freaking high point.
Princess Tutu is fairly short. Some of the episodes are mini episodes that are about 11 minutes long or so. Nanoha isn't so long either, when you combine all 3 seasons of it. Season 2 is the best, in my opinion.

One Piece is the first long anime i really got into. Sure there is a LOT of episodes but every one is worth it. I agree it's not very attractive from the beginning: childish designs, weird plot, ect... But when you watched the first 20 episodes or so, it become an awesome story. A story of adventure. A story of humor. A story of love. A story of imagination. Yeah one piece is THE anime outta here if you dont listen at all the stereotypes on it.
P.S.: DONT watch at the dubbed version. It makes me cry inside when i see that 4kid crap.
